I get bored of eating the same kind’of meals on a daily basis so I google, download food apps and try out online recipes just to make sure I eat something special everyday. Its my way of keeping myself on track as far as healthy eating goals.
Panzanella or panmolle is a Tuscan salad of bread and tomatoes that’s popular in the summer and dates back to 16th century Italy (thus the greeting). This salad is delightfully fresh and just delectable. And as if thats now good enough, its the perfect way to use stale bread (its better than throwing it away)
I found this recipe in fresh living magazine and I figured I would try it out. I want to share it with you all so you can try it out.
I hope you enjoy the salad. I am absolutely sold on it, its my new number 1 salad.
The Ultimate Panzanella (with a twist)
- Ripe Tomatoes
- Bell Peppers (red and yellow)
- Cilli
- Salad Dressing
- Cheese
- Rye Bread (healthier option )
- Garlic
- lettuce
Cut the tomatoes in half, squash remaining tomatoes with your fingers and add them to the plate (extra juices). Cut your peppers and grill them lightly. Add olives/cucumbers/capers/chilli. Whisk together a salad dressing of your choice (I used vinegar, garlic,olive oil, and seasoning). Finish off by addong your soaked bread and dressing to the salad and enjoy.
