Happy Easter,
Cooking on a budget has never been easier, tastier, healthier and fun. These meals will have you missing home if you are away from home. If you are a student then this is especially for you. You probably have some of the ingredients in your kitchen already !!!!! On holidays like Easter I miss home a lot and a good meal with friends helps me manage the nostalgia. However I really don’t enjoy unhealthy food as much as I used to. I don’t want to wake up the next day feeling bloated and unhappy, if you’re like me, I have a solution. You get to enjoy a big, wholesome, nutrient packed healthy and satiating meal with friends or family
I compiled a couple of side dishes that are easy to make and super nutritious.
I used my favorite vegetables. The kind that even if you aren’t a healthy food person,you will still enjoy these. You can get your kids to have them too. My favorite vegetables are green beans, beans, red bell peppers, spinach and mushroom… And in the dessert I have some of top rated fruits. we have mango, strawberry, pineapple and red grapes. If you meal as one or more of the ingredients I just mentioned you can have that nice piece of chocolate cake or the extra Easter egg without feeling guilty The chicken was stuffed with sausage, cherry tomato and mushroom (and yes the wine was for cooking and not drinking, shame on you for thinking otherwise 😀 ). To flavor the rice I fried it with onion, garlic, mixed herbs and cinnamon before adding water and allowing it to simmer.

Spinach is high in anti oxidants, high in vitamin V, A and Iron. Making it the perfect food for skin, bones and digestion!!!! Ladies spinach is the superman of vegetables, it will help cure your acne if you eat it regularly and even if you don’t have skin problems, it will help you get that inside glow. Mushroom at high in Vitamin D which make them high in antioxidants, they increase your metabolism so if you watching your weight here’s something to have an extra serving off. As for the dessert, its also packed of good nutrients. You can have as many servings as you want (too much of anything is bad for you though, don’t forget that).
Strawberries are a bona fide super food. They are high in Vitamin C and antioxidants which make them great for skin, your immunity, eyesight and so much more (I can have a post dedicated to strawberries, if you would like that just live a comment in the comment section and we’ll be good to go) Mangoes are the king of fruit. If you have skin issues, if you want to lower your cholesterol or improve your eye health then you and the king need to become friends Pineapples they have the best immune system support, they are great for eye health and bone strength but if you have ulcers or any acid reflux problems having too much pineapple will ruin your Easter so I suggest just a cup full. Red Grapes can help power up your weight loss, improve your brain power and so much more.
