I have to admit I don’t eat well during weekends, I wake up early surprisingly but I am usually just in bed doing scrolling through my social media, reading blogs or writing reviews and somehow time just gets away from me and before I know it’s already lunch time. Well I challenged myself today and I made a proper breakfast with zero compromise on nutrition and taste.
I was honestly craving wings when I woke up this morning then I remembered I have this buffalo chicken recipe so I made this mouth-watering (if I do say so myself) buffalo chicken sub sandwich accompanied by a side of cherry tomatoes because I love tomatoes, cucumbers for that extra healthy element and finally the frozen blueberries to cleanse my palette whilst I continue with my blog catch up.
This and a cup of coffee and I was a happy chipper. Saturday you can come at me. Next time you are craving buffalo wings but you too lazy or broke to make that trip to Spur, treat yourself to a healthy buffalo chicken sub sandwich. Here’s the recipe for mine:
- Chicken breasts cut into strips
- Salt and pepper
- Cayenne and Paprika
- Your favorite wing sauce, I used Nandos Sauce
- Bell Peppers
- Dijon Mustard
- Vegan Mayonnaise
- Pepper dews
Fry and add lemon, herbs, a sprinkle of sugar and a little bit of balsamic vinegar and you’ll be good to go. Mix the mayonnaise garlic, honey, salt, mustard and pepper in a bowl and use that as your spread
