Soups for the soul: 2 simple and easy recipes worth trying 😊

I hope winter is treating you better than its been treating me. Okay, I  don’t  mind cold weather, I really don’t. If you’re dressed for it I think you’ll be alright. However I can’t stand Eastern Cape winter. Why? you might be asking, thats because the weather gods saw it fit that winter this side of the world  be accompanied by rain and I don’t like rainy weather especially when I have things to do and places to be.   What makes it so awful is even if you have an umbrella you will still get wet. I had one today but the wind was so unforgiving so I got drenched 

Today I learnt a very valuable lesson? You can find happiness in the most simple and unexpected places. I leant that Happiness  is a warm bowl of soup on a cold day. My umbrella and coat were no match for the wind and the rain today, I got rained on whilst  running a couple of errands and by the time I got home I was freezing and I couldn’t shake it off so I decided to make soup!!! 

During winter soup is the best way to warm yourself up. Take a warm shower, make your soup and I promise you happiness and peace !!! 

I decided to make two kinds of soups, the great thing about soup is you can store it in the freezer and have it whenever you feel like it !!! 

Let me stop babbling on and on. Here are two amazing recipes to try next time you feel like a light, healthy meal or as a starter! 

Butternut Soup for the Soul 

  

  • Butternut 
  • Onion 
  • Green pepper 
  • Carrot
  • Thyme 
  • Chicken stock 
  • Cream 

Allow the vegetables to boil until cooked then add your cream blend will smooth and creamy. You can add more chicken stock and cream for your required consistency 

Baked Potatoe and Bacon Soup  for the Soul 

  

  • Potato
  • Cheddar cheese
  • Milk 
  • Flour
  • Bacon 

This hearty, delicious soup is so easy to make. I baked my potatoes on the microwave. All you do is wash them, pierce them with a knife and put them in microwave on high for about 5mins +|-. Fry your bacon and set it aside. Make you cheese sauce (melt butter, add flour to make paste. Add milk and grated cheeses and stir till  cheese had melted and voila you have your cheese sauce). Add chicken stock and potatoe and the bacon to the pot and blend it together till you get the consistency you would like. I like my soups really creamy.
